I’m used to software like photoshop allowing you to hold SHIFT to draw a perfect straight horizontal or vertical line. Is there a key for that in animation paper?

No, not in the current version. But thanks for mentioning this! It has been requested a few times before – and we are going to implement it soon for one of the next alpha releases.
