In drawing programs, it’s definitely more common/popular to do the buildup in an additive way, but for tonal organization, having a “cap” or ceiling alpha set by the brush settings works well. It creates a kind of bracket that ensures that tones will never spill over a certain alpha percentage, and then they can be isolated or stripped off easily by a process further down the line in After Effects or similar.
